MATHISTON — Eight years ago, Conner Goodin’s baseball team had a fundraiser. His dad, Britt, cooked barbecue for the event with another baseball dad, Carlton Rowlen of Mathiston, using Rowlen’s grill.
After that, Britt asked Rowlen if he thought 15 or so people would be interested in purchasing Boston butts. Interest was there, and it soon turned into a terrific sideline for Britt and a wonderful thing for the Webster County area.
From that baseball team fundraiser grew Pig-N-Out BBQ, a catering business that stays busy. The Goodin family generally starts cooking about 5.30 Friday afternoon. Britt and Conner take care of the meat while Tracy works on the sides (usually baked beans, slaw and sometimes banana pudding).
Almost every Saturday you’ll see the red tent pop up at the Texaco station on Highway 82 in Mathiston. People line up, visiting with each other as they wait for pulled pork plates, brisket plates, ribs, barbecue chicken halves, fried catfish or chicken strips, sausage dogs and jambalaya or crawfish when they’re in season.
Their menu has grown over the years, and they have created their own sauce. A recent addition to the menu has been “redneck beignets” – a canned biscuit, deep fried and rolled in confectioners’ sugar.
The enterprise involves the whole family: Son Conner, who is a student at East Mississippi Community College in Mayhew and works part time at GTO Enterprises in Mathiston; Mom Tracy, who is employed at Starkville Manor, and Dad Britt, who works full time as a state trooper. Overseeing things is daughter Jersey.
Each weekend they’ll barbecue about 24 Boston butts, a couple of briskets and 40-50 chicken halves, and they may have seasonal items like crawfish and jambalaya. A recent addition is fried catfish and fried chicken strips.
“We hope we sell out early so we have some time to spend as a family or on our own,” says Connor. “And some days we’re too tired to do much afterward.”
The menu and location is posted on Facebook each week and custom cooking can be done for holidays or special groups.
“We cooked for the Avery Morrow benefit recently,” Tracy said. “We like to give back to the community as much as possible.”
